What is Galician Cuisine?

Our Galician Cuisine Masterclass features an Eastern European collection of the various cooking traditions of the Slavic people of Western Ukraine accumulated over hundreds of years. Galician Cuisine cuisine is heavily influenced by the rich dark soil from which its ingredients come and often involves many components that descend from ancient peasant dishes based on plentiful grain resources such as rye as well as staple vegetables such as potatoes, cabbages, mushrooms and beetroots prepared in a traditional manner.

What are some examples of Galician Cuisine?

The national dish of Ukraine that undeniably originates from the country is borsch  – a vegetable soup featuring beets, cabbage, potatoes, tomatoes, garlic and onions that is prepared in literally dozens of ways. We’ve sampled one version that was prepared like a cocktail with its swizzle stick impaling portions of varenyky submerged in it.  However, varenyky [dumplings AKA pirogy] and holubtsi [“pigs-in-a-blanket”] are also considered National favorites and are a common meal in traditional Ukrainian restaurants as well as at home.

What about your Galician Cuisine Masterclass?

Our Galician Cuisine Masterclass is a privately-catered, invitation-only cooking class run either by Chef Kataryna or Chef Marta in their kitchens located in downtown Lviv, that are offered to a limited number of “students” per session where you will learn the basics of preparing a traditional Galician meal and then – best of all – you get to eat your own food –  and be your own critic – just like with all of the Masterclasses we offer.

[We should note here that there is also the Spanish variety of Galician Cooking which is a different kettle of fish.]
